My wines must be as representative as possible of their terroir, optimizing as best as possible the minerality which for me is the greatest freshness that one can imagine in a wine.I am constantly looking for the right balance in my wines, systematically favoring finesse over strength.THE WORKThe work in the vineyard is done entirely manually. The estate has now been certified in Organic Agriculture since August 2022.The harvest is decided plot by plot so that each bunch is harvested with perfect maturity.The plots are then vinified separately so that the blends can be adjusted for each vintage.For both whites and reds, I am constantly looking for freshness, minerality and fruit. My main goal is for each wine to reflect the terroir from which it comes.THE VINEYARDThe soils are essentially granite and provide minerality, a beautiful balance and a protective structure.The vines, perfectly exposed South/South-East, are protected from the west and north wind. We enjoy a temperate climate with good sunshine and rain which means we do not suffer from drought.Each season, we must face the constraints of our terroir, climatic hazards as well as the various diseases that can attack the vine. It is important to make the right decisions at the right time, in order to protect our crops, to obtain a quality yield while respecting our soil.
